This is another dish where there is no limit to ingredients or imagination,l as long as you stick to the basic recipe.
Ingredients:
1) 2 teaspoons olive oil.
2) Any/all of the following vegetables:
Chopped onions
Boiled and chopped potatoes
Diced Tomatoes
Diced green peppers
Diced yellow/red peppers
Chopped mushrooms
Green peas
Orange carrots
Blanched spinach (spinach leaves put into boiling water, covered for a minute and taken out)
3) 2-3 eggs
4) 1 tablespoon milk
5) 2 tablespoons grated cheese (optional)
6) black pepper or red chilli flakes (your choice here)
7) salt
Method:
1)Beat the eggs with the milk, and set aside.
2) Heat Olive oil in a pan and saute the vegetables (Onions go first, then peas, and then the others)
3) Add salt to the veggies, cover for 2 minutes
4) Pour the eggs over the veggies on a low flame
5) Add chilli flakes/black pepper (I prefer coarsely ground/milled pepper)
6) Add cheese and fold
7) Cover and cook for 2 mins
8) Flip to the other side and cover and cook.
9) Nice with toast/Garlic bread
Tips:
Variations like bacon, sausage or pepperoni can be added for the meat lovers (roast before adding all veggies).
